Spinach-Egg Curry

INGREDIENTS:

  • 1 Box of Frozen Spinach
  • 1 Onion
  • 3 Eggs
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Tumeric Powder
  • 1 Tbsp Red Chillie Powder
  • 1.5 Tsp Salt
  • half Tsp of Jeera (Cumin) Powder
  • 3 Tbsp Cooking Oil

The amount of salt and spice powder you add can be increased or decreased depending on your taste!

PREPARATION:

  • Heat oil in skillet on medium heat
  • Dice Onions and place into skillet. Allow the onions to cook for one minute
  • After one minute, add tumeric powder, ginger garlic paste, boxed spinach, salt, chillie powder, and cumin powder.
  • Allow all ingredients to cook in skillet for 10 minutes on medium to low heat.
  • Add eggs into the skillet and allow for eggs to cook for 5 minutes.
  • Once eggs are cooking, mix all ingredients of the skillet together.
  • Allow 2 more minutes of cooking on low heat
  • Enjoy!
